'Carbonic maceration' — A processing technique that sounds fancy (probably because it's borrowed from the wine trade!). It's the exciting coffee cherry fermentation technique that makes your beans taste even more fruity.
Carbonic maceration is a whole-cherry, anaerobic winemaking technique where intact grapes are fermented in a carbon dioxide (CO₂) rich environment rather than by yeast to enhance fruity notes.
